Understanding Mezcal's Sophisticated Cousin

While both mezcal and tequila are distilled from agave, significant differences in their production processes and the varieties of agave used set them apart. Mezcal, including those produced by Maravelus, can be made from over 30 different types of agave, while tequila is limited to the blue agave.
